Macarons: Sara's Cooking Class

Macarons: Sara’s Cooking Class is a fun cooking game with a real recipe for coconut macaroons and three different kinds of macarons.

  • Macarons are sweet meringue-cookies made with almond flour. They are light and delicate, and are usually filled with a layer of buttercream, ganache, or jam.
  • Macaroons are small cookies made with egg white, ground almonds, and coconut. They are heavier and more solid than macarons.

Our chef Sara will teach you how to make these four cookies:

  1. French macarons with vanilla, pistachio and almonds
  2. Strawberry macarons with a strawberry jam filling
  3. Chocolate macarons with a chocolate filling
  4. Coconut macaroons dipped in chocolate

You can find a real recipe for all of these macarons in the game, so you can try making these delicious treats at home!

Making perfect macarons

You don’t need many ingredients to make macarons. However, macarons are usually thought of as quite challenging to make. That’s because they can break or crack in the oven easily.

While cracked macarons will still taste good, here are five tips to help you get perfect results:

  1. Be precise: Make sure you measure all of your ingredients carefully.
  2. Know when to use an electric mixer: The almond flour and icing sugar can be mixed together with an electric mixer. This will make the mixture smooth and powdery. Using an electric mixer makes beating the egg whites quicker and easier, too.
  3. …and when NOT to use an electric mixer: However, when it comes to adding the dry ingredients to the meringue, carefully fold them in using a spatula. You mustn’t use the mixer for this, or the batter will become too runny and the macarons will collapse!
  4. Use the macronage technique: Folding the dry ingredients into the meringue is done with a special technique called ‘macronage’. Start by folding in the ingredients gently. Once the ingredients are mixed, smear the mixture up against the sides of the bowl more aggressively with your spatula. Then, scrape it all back into the middle and repeat. This helps to press out the air. The mixture should become shiny, and it should pour like thick lava.
  5. Do the figure-8 test: If the batter is not mixed thoroughly enough, the macarons will crack in the oven! To test whether your mixture has the right thickness, lift your spatula and see if you can draw a figure 8 with the falling ribbon of batter. The ribbon shouldn’t break, and should take around 10-15 seconds to sink back into the rest of the mixture.

If in doubt, look up some videos of macronage to see what the mixture should look like and how thick it should be.
